Rocky Road Popcorn Bars

Super colourful and full of texture... what's not to love about a crunchy chocolatey popcorn bar. The best part is that they are a no bake recipe and I'd say they're perfect for getting the kids involved as it only need a mixing bowl and 20 minutes attention


Why I made this recipe: I love a bake however I'm not a fan of complicated recipes and an abundance of ingredients, I wanted to create a low fat recipe without the need to add any granulated sugar and this definitely hits the spot.

 

 

Calories and Macronutrients*: Per bar

  • Calories: 120

  • Carbohydrates: 18g

  • Fats: 4g

  • Protein: 1g

Ingredients:

  • 50g Sweet popcorn

  • 100g Mini marshmallows

  • 75g 'Rice Crispy' cereal or 'Cocopops'

  • 5tbsp Skinny/Zero calorie syrup or usual golden syrup

  • 100g Dark chocolate

Method:

  • Line a square baking tray with parchment

  • Weigh the popcorn, cereal and marshmallows (save a handful of marshmallows for later!). Combine these three ingredients in a mixing bowl and set aside.

  • Measure and add the syrup and fold into the mixture of popcorn, cereal and marshmallows. You'll need to keep folding the mixture until all ingredients are coated in syrup. Tip: If you're not "counting calories" I'd suggest an extra tsp of syrup to create a more firm popcorn bar otherwise they can crumble!

  • Melt the chocolate (I leave 20g aside for later) in the microwave for 2 minutes, stirring every 30 seconds.

  • Add the melted chocolate to the mixture and continue to stir until fully combined.

  • Spoon the mixture into the prepared baking tray and sprinkle with the remaining marshmallows. Cover the tray and leave to set in the freezer for 20 minutes or for 2 hours in the fridge.

  • Again, microwave the remaining chocolate stirring every 30 seconds.

  • Remove the bars from the freezer and use a hand balloon whisk to 'splash' melted chocolate over the bars for decoration.

  • Return the popcorn bars to the fridge to set for a minimum of 4 hours or for better results, overnight.

  • Divide into squares of 12 (or 8 for larger bars) and enjoy!
